INGREDIENTS
- 1 onion, chopped
- 4 garlic cloves, crushed
- 1 pinch cayenne pepper
- 1 teaspoon paprika
- 1L vegetable stock
- 4 tbsp frik (crushed wheat)
- 1/2 tin chick peas, chopped
- handful of each parsely and coriander, chopped
- 4 mint leaves
- 1 lemon
METHOD
Prep time: 5 mins | Cooking time: up to 40 mins
- Gently fry the onion until soft
- Add the garlic and cook for another 2 minutes, then add cayenne and paprika and cook for another minute
- Add tomato puree and stock and bring to the boil
- Add the frik and simmer, until Frik is soft (approx:30min)
- Blend with a blender and add in the chickpeas and herbs, let it cook until the chickpeas are heated
- Add a squeeze of lemon and serve with borek (spring roll)
