North African Chorba
INGREDIENTS
  • 1 onion, chopped
  • 4 garlic cloves, crushed
  • 1 pinch cayenne pepper
  • 1 teaspoon paprika
  • 1L vegetable stock
  • 4 tbsp frik (crushed wheat)
  • 1/2 tin chick peas, chopped
  • handful of each parsely and coriander, chopped
  • 4 mint leaves
  • 1 lemon
METHOD Prep time: 5 mins | Cooking time: up to 40 mins
  • Gently fry the onion until soft
  • Add the garlic and cook for another 2 minutes, then add cayenne and paprika and cook for another minute
  • Add tomato puree and stock and bring to the boil
  • Add the frik and simmer, until Frik is soft (approx:30min)
  • Blend with a blender and add in the chickpeas and herbs, let it cook until the chickpeas are heated
  • Add a squeeze of lemon and serve with borek (spring roll)
